I’m surprised Italy wasn’t one of the first places my wife mentioned when we started talking about a trip, as the Amalfi coast is her favorite destination. I suspect she might be holding back on Italy to save as a destination for a future trip. I think she’s got some big surprise already in the works for when I retire.
You maybe know this Andrew however Nice is in France….albeit only about 20 miles from the Italian border and historically was part of Italy until it finally rested with France from the mid 19th century. It’s a good base also to explore Italy as we have done before.
Haha! I intended to comment on both yours and Greg’s recommendations then forgot about yours after the copy/paste. The Côte d’Azur has been on our list for awhile now, specifically Menton which has been recommended to us by a number of people.

Read this and see if it has any influence. Seville, Granada, Andalusia.

You don’t need to sell me on that region of Spain! I’ve been to Granada and found it fantastic. I’ll check out the link, for sure.

EDITED TO ADD: That book sounds fantastic. My wife has a bit of an obsession with flamenco, so this could be an easy sell.

Quite the score at a used bookstore to help me research travel destinations.

I know this from experience! Had to change plans in Hamburg once. It was terrible. It felt like the Newark of Germany! Now Munich on the other hand. That airport was impressive.

Some great recommendations thus far.

I would like to suggest Chamonix, France.
A truly stunning part of the world. Lots of walks, rides etc to be had. Spring time would be a wonderful time of year. The likes of Geneva are an hour away. And a short trip through the tunnel and you're in Italy.
And then of course, you have the food. All the raclette and fondue you could hope for!

Mykonos, Greece. It’ll match your new watch (wear it on a blue NATO!).

Amazing fact about Frankfurt airport… with more than 80,000 employees it is Germany’s largest employment site.

Malta

A whole country you can drive around in a couple of hours, should you want to, but with more history and more to see than you can shake a stick at and a wonderful, genuine authentic mix of cultures blended together over centuries to create a unique one of their own.

Beautiful weather, fantastic people, stunning views, fabulous food, stunning architecture…just book it now!

Ooh! I wild card! I actually quite like this suggestion for all the reasons you mention.
