If by notchy you mean it skips to one of 24 positions rather than smoothly advancing, then that is normal as Phil says. You can’t position the GMT hand to anywhere you like - the exact position depends on where the minute hand is.

Real easy. If it takes 5 minutes you’re overdoing it. Still happy with the partial patina, and knowing it will do its own thing again quickly gives me something to look forward to in a few months.

If it’s a CW SS it’s a pain, because they use pin and collar links. Ever considered a Sinn 103 Guy? They describe it as a “Pilot Chronograph”. It houses a 7750, has screw down crown and pushers, and a countdown bezel.
