I watched a YouTube video yesterday, where the host, stated he was shocked to see an Exhibition watch in the Rolex AD was working.

No Steve - they are actually bonified working Rolex watches.
Apparently, and this is what I was told, all Rolex AD's are supposed to have a certain number of the different variations of Rolex watches (Oyster Perpetual, DateJust, Cellini, etc. - obviously dependent upon the availability from Rolex to supply) on display as Exhibition Only.
When the AD gets their next batch/delivery, they can then see about what they put on display and what they can sell - This would also be dependent upon what they have people waiting for  , i.e. an immediate sale/fast turnaround.
I also found out that my AD has to buy the watches up front which is a significant cost especially if you're a family run business (as opposed to the likes of a group or chain of shops).
