Having had a Pelagos and a UX in the past, choosing one over the other would be quite difficult, I think. The oil-filled Sinn really is quite different to look at and personally, I never found the Tudor clasp particularly comfortable (it's quite long). So, in the end, I would go with the Grand Seiko.
