I don’t know about which sex is preferable, but if you have older ones then the diet of single malt whisky they live off tends to give them a more robust flavour. Younger ones haven’t had time to adequately ‘mature’

On a short vacation this week. Fish tonight, from a choice I had some sea bream , and salmon trout. I thought I should upload a picture, (shortly after starting!) :D

Baked chicken with halloumi, mushrooms, tomatoes, garlic, basil, oregano, olive oil…

Served with garlic mash and green beans.

Is that a sheet of Kitchen Roll, to soak up the fat, on the base?

I just have the shiny side of foil, to help reflect heat back into the steak.

I put the steaks on a rack on a sheet pan just to season them - S&P on both sides. I line the pan with foil then put down paper towel to soak up any moisture that’s drawn out so I don’t have to clean the sheet pan. So no cooking is taking place with what you see in the pic. In an ideal world I’d have seasoned these at least 24 in advance. Last night was just for a few hours.

I cooked the steaks outside on a cast iron grate on a charcoal grill.
