I’ve used chicken stock and beef stock and sometimes half and half. Tonight its all beef stock - store bought, I’m afraid [hangs head in shame]. To be honest, I’ve barely used the same recipe twice. Even with the one I’m using tonight (from Mark Bittman’s How To Cook Everything - an excellent cookbook, by the way, kind of a Joy of Cooking for the modern day), I’ve tweaked it a bit based on things from other recipes. The Julia Child recipe is the one I’ve used most often, but I couldn’t put my fingers on it tonight.

As for the cheese, tonight it will be a Gruyère.

I'm watching a programme about the growth of M&S, starting with Chicken Kiev. Salivating again. But it's actually fish fingers and chips tonight.

The Bourguignon (with potatoes) spent six hours in the slow cooker, with dumplings added near the end. Perfect one-pot winter dinner!
