Being in the UK, I've no experience of handling a Return from the EU. However, the process is clearly set out on the CW website - returns, with a special note should you be in Germany.
As for a chargeback via your credit card, this is designed to be used as an ultimate sanction when you have been unable to get a refund from a merchant in the normal way. It would be a misuse of the procedure to try to use it from the start. I'd imagine that a question of 'have you already tried to get a refund from the merchant?' will be asked.
As to the general role of the 60/60, bear in mind it is designed to give you the opportunity to inspect the watch and decide whether you wish to keep or return it. It should be returned in new / unworn condition. You can't wear it for 59 days and decide.

I’m not suggesting keeping the watch until the 59th day just to return it, but since CW is an online-only retailer, there’s no option to try on different colors before deciding. So, I’m curious if anyone from the EU has actually returned a watch (in new condition, with plastic covers still on) and received a full refund smoothly—without any extra hassle with customs or taxes.
From what I see here, U.S. customers can sometimes run into issues getting a full refund, especially if they end up dealing with customs fees separately. So, I'm wondering if it’s really as straightforward as CW’s site suggests for EU customers to get a hassle-free return. If so, it could be a good way to order and try out multiple colors of the Bel Canto and then return the ones that weren`t right.
Has anyone from EU tried ordering multiple watches and returned the ones not needed?

I think the 60/60 is pretty generous. You can book a zoom call to help you address your concerns since trying is not an option
