Do the ETA movements work the same way as the Rolex ones, in that they do not tick?

You mean one tick per second like a quartz or you mean that you cann't hear any ticking at all? An ETA sounds more like ticketicketicketicke.....etc.
The ETA runs at 28.800 vibrations per hour that's 8 vibes per second. A quartz runs at 1 tick per second.

And if you are able to hear the ticking depends largely on the case of the watch, the Rolex-case (Oyster-case) is very heavy and solid, so it is very difficult to hear the ticking. Cases with a display-back isolate the sound a bit less, so in those cases you are able to hear the ticking a bit better. I personally like to hear the ticking-sound, it really belongs to the mechanical watch!

Auto watches like the Malvern and Rolex have a second hand that sweeps very smoothly and you can barely see the visual ticking. On quartz movement watches, you see it tick each second.
