Great logic and almost certainly spot on. Missing a link to cheese.
You're so right. I was trying to work out where the link to cheese was. Then I realized, the word "Edam", using the A1Z26 cypher, would represent the numbers 5, 4, 1 and 13. Or, put another way, 13/5/41 (or 5/13/41, the 13th of May 1941...). That date is just 11 days from Bob Dylan's birth date on 24th May 1941. And where does 11 link with Bob Dylan? Well, perhaps the line "wants eleven dollar bills, [but] you only got ten". This is from the song Subterranean Homesick Blues.

Homesick? It can only be a GMT function. So, in conclusion ladies and gentlemen:

Desk Diver
SH21 Movement
GMT function
Only comes on a band

It's a poor man's tourbillon. An exposed balance wheel.

We all know how it is with ear worms: I've got the Byrds singing "Hey, mister Tourbilllon man play a song for me" : guess I'll fit the horological words in later.

Though you might hear rotors spinnin’, when the crown turns they are spun
It’s not the SH21, it’s just escapements on the run
Of the movements that titanium’s encasin’
And if you hear vague traces of small red beaks of chime
and your tourbillon’s in time, it’s just an automatic wind
Your pre-order is assigned
Then a parcel that a courier is tracing

I really hope after all the hype it isn't a tourbillon - a pointless and expensive solution to a problem that no longer exists!
